While similar in texture, portabellas are left to grow larger, allowing their caps to open and the spores in the gills to develop fully. This contributes to their intense, delicious flavor.

Amazing flavor

I have a pound each of portabella and shiitake. I have only tried the portabella so far. I am learning what works for me as far as soaking them. I have done tap water and boiling. I got wonderful broth both ways. Made a delicious cream of mushroom soup with that as well as used in gravy. This is all new to me so still working on getting the texture right but I have faith I will they are too good not to.
