Prized for centuries in the Orient, the shiitake (pronounced she-TAH-keh) mushroom has a hearty flavor and meaty texture. Its Japanese name means "oak mushroom." Shiitakes are valued in Japan for their taste and heralded for their healthful effects. 
Shiitakes are delicious with baked fish, in omelets or in soups and stir-fry dishes. Try substituting rehydrated shiitakes for all or part of the beef in your favorite stroganoff recipe.

Dried Shiitake Mushrooms

I have not cooked with them yet, but based visual inspection I have found them to be quite good. I selected Forest Mushrooms as they are from the US. Can't wait to try them in our favorite dishes.

Second Purchase

Bought and ate a half pound of dried Shiitakes from Forest and now I've ordered a 1.5 pounds more. Clean-no grit, had a few broken pieces in my first order but none in this one (not that it matters much) plenty of flavor, reasonable price, and grown in the U.S. Love the powdered Porcini and the Grade A dried Porcini, too. WIll be buying more of each.

Great mushroom selection, less packaging

I came to FM to avoid the non biodegradable packaging of the grocery store mushrooms. That was a few years ago. Since then I’ve learned the best uses for the Shiitakes and Straw mushrooms. I’m now experimenting with the shredded Wood Ear mushrooms. For the serious cook, planning a fruit and vegetable based diet, these dried mushrooms are fantastic. A good value as well. The straw mushrooms are really good in soup, I have never gone back to grocery store mushrooms. We are lucky to have a Midwestern grower who sells directly to the public as a dried agricultural product.
